What’s for dinner this week, you ask? How about this amazing one skillet chicken!
Creamy Tomato Basil Chicken
2 pounds chicken breast, tenders or thighs, whichever you like best
1 can coconut milk fat
2 cups chicken broth
1-2 cups chopped cherry tomatoes
Tiny jar of julienned sundried tomatoes
4 cloves of garlic
1/2 diced onion
2 cups spinach
1/2 cup chopped basil
Sauté the garlic & onion in your skillet with olive oil, butter or ghee
Add chicken and cook on both side until it starts to whiten
Add both tomatoes
Add the rest of the ingredients (except for the spinach and basil) and simmer until chicken is fully cooked
Add the spinach and basil at the very end
Turn off and let cool for a few minutes before serving
Serve with rice, potatoes or just all by itself!
*Remember my ingredients are just a guide. You can change things up and play with measurements however you like. The key to getting good in the kitchen is playing around and finding what tastes good to you!
